Breakfast Cookies
Three words…. cookies for breakfast. Genius. These nutritious and delicious cookies will start your day off on a high note. These are great on their own or as a yogurt bowl topping. The bananas, oats, and nut butter make these a perfect pre-workout snack, and the cacao nibs, seeds, and coconut flakes make sure you’re getting a healthy dose of nutrients.
Mix:
2 overripe bananas
2 cups oats'
1/2 cup nut butter
dash of cinnamon
1/3 cup date syrup or maple syrup
handful of cacao nibs
spoonful of chia and flax seeds
spoonful of pumpkin seeds
Instructions:
Add ingredients to a bowl and mix
Form into mid-size balls and place on a baking sheet
Top with coconut shreds
Bake at 350 for 15 minutes and enjoy!
