Breakfast Cookies

Three words…. cookies for breakfast. Genius. These nutritious and delicious cookies will start your day off on a high note. These are great on their own or as a yogurt bowl topping. The bananas, oats, and nut butter make these a perfect pre-workout snack, and the cacao nibs, seeds, and coconut flakes make sure you’re getting a healthy dose of nutrients.

Mix:

  • 2 overripe bananas

  • 2 cups oats'

  • 1/2 cup nut butter

  • dash of cinnamon

  • 1/3 cup date syrup or maple syrup

  • handful of cacao nibs

  • spoonful of chia and flax seeds

  • spoonful of pumpkin seeds

Instructions:

  • Add ingredients to a bowl and mix

  • Form into mid-size balls and place on a baking sheet

  • Top with coconut shreds

  • Bake at 350 for 15 minutes and enjoy!
