Leftover Vegan Lunch

I am a huge leftovers advocate. Why put so much effort into a meal without being able to enjoy it for at least a couple of days? Whenever I make my tofu scramble (the recipe is available on the website) I make at least enough for two meals just so I can make this bagel sandwich. It’s super easy and always hits the spot.

Here’s the deal:

  • Grab a bagel and toast it (I used my 5 ingredient everything bagel)

  • Spread some avocado on one side (feel free to add some hot sauce or other seasonings)

  • Spread hummus on the other half

  • Add leftover tofu scramble

  • Fold her into a sandwich and you're good to go!
