Lil Lunch Salad

After a giant breakfast, like my pumpkin pancakes, sometimes a lil lunch salad just hits the spot. The great thing about salads is you can do whatever you want with them. You have full creative control. Just throw some veggies in a bowl and pair it with a yummy dressing. You can’t go wrong.

Here’s the deal:

  • The base is spinach and romaine mix

  • Your favorite dressing (I used Primal Kitchen’s Caeser dressing) or just some olive oil and balsamic

  • Violife vegan feta crumbles

  • Roasted tomatoes (cook baby tomatoes in olive oil, salt and pepper in a pan until they're soft)

  • Chickpeas

  • Diced red peppers

  • Hemp hearts
