Rainbow Buddha Bowl

Not only is she beautiful, she is also packed with protein, vitamins, and fiber. Oh and most importantly she is TASTY. I make this recipe at least once a week because it’s easy and helps me use up a bunch of groceries.

Here’s how I build my bowl:

  • The base is kale massaged in oil (makes the kale easier to digest)

  • Add lentils (make sure to rinse them first) or cooked rice

  • Dice 1/2 a sweet potato and bake in the oven (350 for 15-20 min) in oil, salt, and pepper then place in the bowl

  • Chop up some red pepper (carrots or cucumber work too) and add to the bowl

  • Top with an avocado and enjoy!
